Apple Butter Recipe

Autumn is my all time favourite season, the colours, the clothing and most importantly, the cosy food. Apple butter is so easy to make, it keeps well and makes for a lovely gift. 


What is apple butter?

Apple butter is a spreadable blend of apples, spices and sugar. It can be used on toast, with cheese and crackers and some meats like pork. 

Does apple butter have any health benefits?

Yes! Apple butter is a good source of fibre as far as snacks go.  Apples are a source of polyphenos which helps with antioxidant activity.  There is a generous helping of cinnamon in this recipe which has been shown to support healthy blood sugar regulation. 

It is also is lower in sugar than commercial products, particularly my recipe, which only has a small amount of sugar added compared to premade alternatives. 


Apple butter recipe

Ingredients

1 cup coconut sugar 

1 pound of chopped apples (peeled or unpeeled) 

1/2 cup of water 

1 tablespoons vanilla extract 

2 tablespoons cinnamon 

1 teaspoon ground ginger 

2 cinnamon sticks 

1/2 teaspoon nutmeg 



Method 

Add everything apart from the vanilla to a slow cooker 

Leave to cook for 3-4 hours, until its very soft and sort of melts when you press it with a spoon (see picture below for reference)

Add the vanilla extract and blend in a food processor or with a handheld blender 

If the texture is a bit thick, add some water a few tablespoons at a time and stir through 

Add to jars and keep in the fridge- enjoy!
